Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving extra hanging over the sides for easy removal.
- Prepare Crumble Mixture: In a large mixing bowl, combine flour, oats, brown sugar, baking soda, and salt. Add the melted butter and vanilla extract. Mix until the mixture is crumbly and comes together when pressed.
- Create Base Layer: Firmly press about two-thirds of the crumble mixture into the bottom of the prepared baking dish to form an even layer.
- Blueberry Filling: In another bowl, combine the blueberries, granulated sugar, cornstarch, and lemon juice. Toss until the blueberries are evenly coated.
- Layer Blueberries: Spread the blueberry mixture evenly over the base crust.
- Add Crumble Topping: Sprinkle the remaining crumble mixture over the blueberries, covering them as evenly as possible.
- Bake: Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the blueberries are bubbly.
- Cool and Serve: Allow to cool completely in the pan on a wire rack. Use the parchment overhang to lift the bars out of the pan and transfer to a cutting board. Slice into bars.
