Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving extra hanging over the sides for easy removal.
  2. Prepare Crumble Mixture: In a large mixing bowl, combine flour, oats, brown sugar, baking soda, and salt. Add the melted butter and vanilla extract. Mix until the mixture is crumbly and comes together when pressed.
  3. Create Base Layer: Firmly press about two-thirds of the crumble mixture into the bottom of the prepared baking dish to form an even layer.
  4. Blueberry Filling: In another bowl, combine the blueberries, granulated sugar, cornstarch, and lemon juice. Toss until the blueberries are evenly coated.
  5. Layer Blueberries: Spread the blueberry mixture evenly over the base crust.
  6. Add Crumble Topping: Sprinkle the remaining crumble mixture over the blueberries, covering them as evenly as possible.
  7. Bake: Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the blueberries are bubbly.
  8. Cool and Serve: Allow to cool completely in the pan on a wire rack. Use the parchment overhang to lift the bars out of the pan and transfer to a cutting board. Slice into bars.
