Instructions
- Begin by preheating your oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.
- In a mixing bowl, combine the cottage cheese, eggs, and olive oil. Stir until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and optional spices like garlic powder and black pepper.
- Gradually fold the dry mixture into the wet mixture, stirring gently to avoid overmixing.
- Incorporate the shredded cheese, green onions, and diced bell pepper into the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Place the muffin tin into the preheated oven and bake for 25-30 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
- Remove from the oven and let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
