- 2 tablespoons vegetable oil
- 5 scallions (cut into 2-inch pieces)
- 1 tablespoon soy sauce
- Salt to taste
Instructions
- Prep the Chicken: Start by patting your chicken thighs dry with a paper towel—this step helps the skin get nice and crispy. Lightly season both sides with salt and set them aside while you prep the scallions.
- Pan-Fry the Chicken: Heat 1 tablespoon of oil in a non-stick skillet over medium heat. Place the chicken thighs skin-side down and sear them for about 8–10 minutes, or until the skin is golden and crispy. Flip and cook the other side for another 6–7 minutes until the chicken is cooked through. Tip: If you’re using boneless chicken thighs, reduce the cooking time slightly.
- Rest and Slice: Transfer the cooked chicken to a cutting board and let it rest for a few minutes. This keeps the meat juicy when you slice it.
- Make the Scallion Oil: In the same pan, add another tablespoon of oil and toss in the scallions. Sauté for 1–2 minutes until they become soft and fragrant—just enough to release their natural sweetness.
- Combine and Serve: Place the sliced chicken on a serving plate and drizzle the hot scallion oil on top. Finish with a splash of soy sauce, and you’re ready to serve.
