Description

A delicious sweet potato casserole perfect for any gathering.


Ingredients

  • 4 medium sweet potatoes (about 2 lbs), peeled and thinly sliced
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1 cup light brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup pecan pieces, roughly chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Arrange half of the sweet potato slices in the dish.
  3. In a bowl, mix melted butter, heavy cream, brown sugar, cinnamon, and salt until smooth. Pour half over the sweet potatoes.
  4. Layer the remaining sweet potatoes and top with the rest of the creamy mixture.
  5. Cover with foil and bake for 45 minutes or until tender.
  6. Remove foil, sprinkle pecans on top, and bake uncovered for an additional 15 minutes until golden brown.
