Vegan Gnocchi Bake

Description

A delicious and easy-to-make vegan gnocchi dish baked to perfection with a variety of vegetables.


Ingredients

Scale
  • 500 grams shelf-stable gnocchi
  • 3 vegan sausages (sliced into chunks, I used Gusto)
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 red bell pepper (roughly chopped)
  • 1½ cups cherry tomatoes
  • 1 red onion (roughly chopped)
  • 2 handfuls spinach (large)
  • ¼ cup vegan pesto
  • to taste vegan parmesan (optional)

Instructions

  1. Preheat the oven to 400°F. Spray a sheet pan with olive oil or line with parchment.
  2. Add the gnocchi, sliced vegan sausage, bell pepper, cherry tomatoes, red onion, spinach, paprika, parsley, oregano, and garlic powder directly to the sheet pan. Toss well to combine, then spread everything into an even layer so it roasts instead of steams.
  3. Bake for about 30 minutes, stirring halfway through, until the gnocchi is lightly golden and the vegetables are caramelized.
  4. Remove from the oven and add the pesto. Stir through until everything is evenly coated.
  5. Return the pan to the oven for about 5 minutes, just to warm the pesto through.
  6. Serve topped with vegan parmesan, if desired.

Notes

  • Add extra veggies of your choice for more flavor.
