Description

A delicious and easy-to-make kielbasa and vegetable bake, perfect for a hearty meal.


Ingredients

  • 14 oz kielbasa (sliced)
  • 2 cups broccoli florets
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 1 lb baby potatoes (halved)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp shredded parmesan
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.
  2. Chop sausage and vegetables into bite-size pieces.
  3. In a large bowl, mix olive oil with garlic powder, onion powder, paprika, salt, and pepper.
  4. Add sausage and vegetables to the bowl and toss to coat.
  5. Spread evenly onto the prepared baking sheet.
  6. Bake for 15 minutes, toss, and bake another 10–15 minutes until everything is tender and lightly browned.
  7. Sprinkle with parmesan and parsley before serving.

Notes

  • For a spicier version, add cayenne pepper.
  • Feel free to substitute your favorite vegetables.
