- 4 oz cream cheese, softened
- 1/2 cup granulated erythritol or your favorite sugar substitute
- 1 large egg, room temperature
- 1 teaspoon vanilla extract (sugar-free)
- 1 cup almond flour, superfine blanched
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: 1/2 cup sugar-free chocolate chips or nuts
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, beat the softened cream cheese and erythritol until smooth.
- Add the egg and vanilla extract, mixing well.
- In a separate bowl, combine almond flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until well combined.
- Fold in the chocolate chips or nuts if using.
- Drop spoonfuls of dough onto a lined baking sheet.
- Bake for 12-15 minutes or until edges are lightly golden.
- Let cool before serving.
Notes
- Store leftovers in an airtight container in the refrigerator.
- For added flavor, consider adding a pinch of cinnamon or nutmeg.
