- 1 lb boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup mayonnaise
- 1 tablespoon chipotle peppers in adobo sauce, finely chopped
- 1 teaspoon lime juice
- Salt to taste
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, thinly sliced
- Optional: avocado slices or jalapeño slices for extra heat
Instructions
- Marinate the Chicken: Start by whisking together the olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper in a bowl. Place the chicken breasts in the marinade and refrigerate for at least 30 minutes—or up to 2 hours for a deeper flavor.
- Grill to Perfection: Preheat your grill or grill pan to medium-high heat. Grill the marinated chicken for about 5–6 minutes on each side, or until fully cooked and nicely charred. Let the chicken rest for 5 minutes before slicing it thinly.
- Make the Chipotle Mayo: In a small bowl, combine mayonnaise, chopped chipotle peppers in adobo, lime juice, and a pinch of salt. Mix until smooth and creamy.
- Assemble the Wraps: Warm the tortillas slightly so they’re soft and pliable. Spread a generous spoonful of chipotle mayo on each tortilla. Top with lettuce, tomatoes, cheese, red onions, and the grilled chicken slices. Add avocado or jalapeño slices if you like it hotter.
- Roll and Serve: Fold the sides in and roll up the wrap tightly from the bottom. Slice in half if desired and serve immediately. You can also wrap them in foil for lunch on the go.
