Description

A flavorful and spicy noodle dish with tofu and a rich Sichuan sauce.


Ingredients

  • 300g wide noodles
  • 200g firm tofu, diced
  • 3 tablespoons Sichuan peppercorn oil
  • 2 tablespoons chili bean paste (doubanjiang)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 cup vegetable broth
  • 2 green onions, chopped
  • Salt to taste

Instructions

  1. Prep the Ingredients: Dice the tofu and set aside. Mince the garlic and grate the ginger.

  2. Cook the Noodles: Boil a pot of water and cook the noodles according to package instructions. Drain and set aside.

  3. Prepare the Sauce: In a bowl, combine the Sichuan peppercorn oil, chili bean paste, soy sauce, rice vinegar, sugar, and salt. Mix well.

  4. Stir-fry the Tofu: Heat vegetable oil in a large pan over medium heat. Add diced tofu and stir-fry until golden and crispy. Remove from the pan and set aside.

  5. Cook the Aromatics: In the same pan, add a little more oil if necessary. Sauté the minced garlic and grated ginger until fragrant.

  6. Add Sauce and Broth: Pour in the prepared sauce and vegetable broth. Bring to a simmer and let it cook for about 2 minutes.

  7. Thicken the Sauce: Add the cornstarch mixture to the pan. Stir continuously until the sauce thickens.

  8. Combine Noodles and Tofu: Add the cooked noodles and tofu back into the pan. Toss everything together until the noodles and tofu are well coated with the sauce.

  9. Garnish and Serve: Stir in the chopped green onions. Serve hot.

Notes

  • For extra heat, add more chili bean paste or fresh chili slices.
  • Adjust the thickness of the sauce by adding more broth if it’s too thick.
  • Consider adding vegetables like bell peppers or bok choy for more texture and flavor.
