Description

A delightful layered cake featuring fresh strawberries and whipped cream.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup fresh strawberries, hulled and halved
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup strawberry jam
  • Additional fresh strawberries for topping
  • Whipped cream for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

  2. In a bowl, combine the flour, baking powder, and salt. Set aside.

  3. In another large bowl, beat the softened butter and granulated sugar until light and fluffy.

  4. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the milk, mixing until smooth.

  5. Slowly add the dry ingredients to the wet mixture until fully incorporated. Pour the batter into the prepared baking pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.

  6. In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  7. Spread the strawberry jam over the cooled cake. Place the halved strawberries evenly on top of the jam layer.

  8. Spread the whipped cream over the strawberry layer. Decorate with additional fresh strawberries and dollops of whipped cream.

Notes

  • To enhance the strawberry flavor, consider adding a tablespoon of strawberry puree to the cake batter.
  • For an extra moist cake, brush a simple syrup (made with equal parts sugar and water) on the cake layers before adding the jam.
  • Refrigerate the cake for at least an hour before serving to help the layers set.
