Description

A hearty and flavorful taco soup that is perfect for a cozy dinner.


Ingredients

  • 1 pound ground beef
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 packet taco seasoning (or 3 tablespoons homemade)
  • 2 1/2 cups beef broth
  • 1 (15 ounce) can pinto beans (undrained)
  • 1 (15 ounce) can black beans (undrained)
  • 1 (15 ounce) can kidney beans (undrained)
  • 1 (4 ounce) can green chiles (undrained)
  • 2 cups frozen corn
  • 1 (14 ounce) can diced tomatoes (undrained)
  • 1 packet ranch dressing mix

Instructions

  1. Heat a large pot on medium-high heat, add the ground beef, and onion and cook until browned, about 7-8 minutes.
  2. Add in the garlic and cook another 30 seconds.
  3. Add in the chili powder, smoked paprika, salt, pepper, and taco seasoning, and cook another 30 seconds.
  4. Add in the beans, green chiles, corn, tomatoes, and ranch seasoning and give it a stir.
  5. Pour in the beef broth and mix until combined, and simmer on low for 1 hour with the lid on.
  6. Serve with all of your favorite toppings!

Notes

  • This soup is great topped with cheese, sour cream, and fresh cilantro.
  • It’s a perfect dish for meal prep; just store in the fridge for up to 4 days or freeze for later.
