Description
A hearty and flavorful taco soup that is perfect for a cozy dinner.
Ingredients

- 1 pound ground beef
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 packet taco seasoning (or 3 tablespoons homemade)
- 2 1/2 cups beef broth
- 1 (15 ounce) can pinto beans (undrained)
- 1 (15 ounce) can black beans (undrained)
- 1 (15 ounce) can kidney beans (undrained)
- 1 (4 ounce) can green chiles (undrained)
- 2 cups frozen corn
- 1 (14 ounce) can diced tomatoes (undrained)
- 1 packet ranch dressing mix
Instructions
- Heat a large pot on medium-high heat, add the ground beef, and onion and cook until browned, about 7-8 minutes.
- Add in the garlic and cook another 30 seconds.
- Add in the chili powder, smoked paprika, salt, pepper, and taco seasoning, and cook another 30 seconds.
- Add in the beans, green chiles, corn, tomatoes, and ranch seasoning and give it a stir.
- Pour in the beef broth and mix until combined, and simmer on low for 1 hour with the lid on.
- Serve with all of your favorite toppings!
Notes
- This soup is great topped with cheese, sour cream, and fresh cilantro.
- It’s a perfect dish for meal prep; just store in the fridge for up to 4 days or freeze for later.
