Description

Deliciously soft and chewy chocolate chip cookies made with brown butter.


Ingredients

Scale
  • 3/4 cup (168g) unsalted butter
  • 1 cup (212g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg + 1 large egg yolk, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 3/4 cup (220g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon kosher salt + more flaky sea salt for sprinkling
  • 1 1/4 cups (210g) semisweet or bittersweet chocolate chips (or roughly chopped chocolate)

Instructions

  1. Place the butter in a small saucepan and set over medium low heat. Use a silicone spatula to stir and scrape the butter from the bottom and sides of the pan every 10 to 15 seconds. Cook until the butter takes on color and small brown bits appear, about 5 to 7 minutes.
  2. Remove from heat, allow to cool for 5 minutes.
  3. In a large mixing bowl, combine the brown butter, brown sugar, and granulated sugar. Mix together, then add the egg, extra egg yolk, and vanilla and mix well.
  4. Add in the flour, baking soda, salt and fold until no streaks of flour remain. The dough should be soft but not sticky.
  5. Fold in the chocolate chips until evenly distributed. Cover the bowl and chill in the fridge for at least 1 hour.
  6. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  7. Remove the dough from the fridge and allow it to soften at room temperature for about 20 minutes. Use a cookie scoop to portion out dough onto the baking sheets, spacing 2 inches apart.
  8. Bake for 12 to 13 minutes until light golden brown. Remove from the oven, sprinkle with flaky sea salt, and allow to cool slightly before serving.

Notes

  • Use a silicone spatula to get the best texture from the dough.
  • For best results, allow the dough to chill overnight.
