Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups white chocolate chips
- 1 cup butterscotch chips (optional)
- 1 cup macadamia nuts, chopped (optional)
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Cream Butter and Sugars: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add Wet Ingredients: Beat in the eggs one at a time, ensuring each is fully incorporated. Mix in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- Fold in Chips and Nuts: Gently fold in the white chocolate chips, and if using, the butterscotch chips and chopped macadamia nuts.
- Shape and Bake: Drop rounded tablespoonfuls of dough onto the prepared baking sheets, leaving space between each cookie. Bake in the preheated oven for 10-12 minutes until the edges are lightly golden.
- Cool Cookies: Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Ensure the butter is sufficiently soft for even creaming with sugars.
- For chewier cookies, slightly underbake and let them cool on the baking sheet.
- Customize by adding other mix-ins such as cranberries or raisins.
