Description

A delicious sourdough bread roll with cinnamon and sugar, perfect for breakfast or dessert.


Ingredients

Scale
  • 200 g filtered water
  • 85 g sourdough starter
  • 70 g cane sugar
  • 1 large egg
  • 8 g sea salt
  • 430 g bread flour
  • 8 tbsp (113 g) unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/2 cup powdered sugar
  • 1 tbsp whole milk

Instructions

  1. In a large mixing bowl, combine 200 g of filtered water and 85 g of sourdough starter, and mix gently.
  2. Add 1 large egg, 70 g of cane sugar, and 8 g of sea salt, stirring until well incorporated.
  3. Gradually add 430 g of bread flour until a shaggy dough forms.
  4. Cover with plastic wrap or a towel and let rise at room temperature for 4-6 hours until doubled in size.
  5. Flatten the dough onto a floured surface and cut into 1-2 inch pieces.
  6. In a bowl, mix 1 cup of brown sugar and 1/2 tsp of cinnamon. Toss each dough piece in melted butter, then in the sugar mixture.
  7. Pile the coated pieces into a greased 9-inch round cake pan and let rise for another hour.
  8. Preheat the oven to 350°F (175°C) and bake for 30-35 minutes until golden and hollow-sounding when tapped.
  9. Mix 1/2 cup powdered sugar and 1 tbsp milk to make a glaze and drizzle over the warm bread.
